Tomato Soup Recipe 🍅 (PT/EN)
I made this recipe on Christmas and loved it, so in this post I’ll be sharing the recipe with you.
I made this soup for Christmas Eve dinner, because we wanted something light to eat before going to sleep. Then, we planned to put a bit more effort into Christmas lunch. This recipe is very easy to make and you can customize it however you like.
In my case, I used two types of tomatoes: a smaller tomato, which is a bit sweeter, and a larger tomato, which was a bit firmer. I wanted to mix both, but you can use whatever tomatoes you like, okay?
To go with the tomato soup, I also made some small toast slices in the oven, to eat together with the soup.
So, let’s get to the recipe 🍅🌽
Ingredientes
- 12 tomates bem maduros (italianos ou comuns)
- 1 lata de milho cozido (sem molho)
- 2 xĂcaras de água
- 2 colheres de sopa de azeite
- 1/2 cebola pequena
- 2 dentes de alho pequenos - no caso eu coloquei mais pois amo alho
- 2 colheres de chá de açúcar (tira a acidez sem adoçar)
- Sal a gosto
- Pimenta-do-reino a gosto
- Páprica doce ou defumada (pitada, opcional)
- Manjericão fresco ou orégano ou coentro (opcional)
This recipe serves approximately 4 people.
Ingredients
- 12 very ripe tomatoes (Italian or regular)
- 1 can of cooked corn (without the liquid)
- 2 cups of water
- 2 tablespoons of olive oil
- 1/2 small onion
- 2 small cloves of garlic – in my case, I added more because I love garlic
- 2 teaspoons of sugar (it removes the acidity without making it sweet)
- Salt to taste
- Black pepper to taste
- Sweet or smoked paprika (a pinch, optional)
- Fresh basil or oregano or cilantro (optional)

Method of preparation
Cut the 10 tomatoes into pieces (you can keep the skin and seeds; it will be strained later).SautĂ© the tomatoes for approximately 5 minutes, just to release their juice — without turning them into a sauce.
While the tomatoes are cooking, blend the cooked corn with a little water, just enough to turn it into a cream, and set aside.
Add the 2 cups of water, salt, pepper, sugar, and the corn cream to the pot with the tomatoes and let it cook for 10 to 12 minutes. It becomes a very liquid broth with pieces of cooked tomato. Blend everything until completely smooth.
Strain through a fine sieve.
In a large pot: heat the olive oil, add the onion and garlic for 1 minute, then add it to the soup, keeping it on the heat for a few more minutes, so it absorbs the flavor of the onion and garlic.
If you like:
You can add, after it’s ready, a drizzle of olive oil, fresh basil, and a pinch of paprika.
⭐ If you want it even lighter
Add another 1/2 cup of water after straining. It becomes more liquid, almost like a drink.

- Sliced cheese
- Sliced ham
- Butter (if you prefer, it can be olive oil or another spread)
- Oregano
Modo de Preparo
Eu por acaso fiz durante o processo da sopa, mas ainda havia um tempinho de preparo. E quando fomos comer as torradinhas, elas estavam frias já! Oops!
Method of preparation
Preheat the oven about 10 minutes beforehand. Cut the bread slices into 4 pieces, spread the butter/sauce, add the cheese and ham, and sprinkle oregano on top. Put them in the oven for just a few minutes to brown and melt the cheese. Done! Tip: Make the toasts when the soup is almost ready, because since they are very quick to prepare, you’ll be able to eat them while they’re still warm.
I happened to make them during the soup process, but there was still some time left. And when we went to eat the toasts, they were already cold! Oops!
